OVERVIEW
Our client Head Bartender’s primary responsibility is to exceed the expectations of their guests and to lead our client bar team by example to ensure that all standard procedures, rules and regulations, quality of service and sequence of service are implemented to a high standard. The Head Bartender must provide a service that reflects the high-touch environment of our client.  You will be required to work towards making our client one of the world’s greatest bars. This entails tireless commitment and a constant striving to do better and do more.

 

As Head Bartender, you will be responsible for nurturing a high-performing, cohesive bar team, providing mentorship as well as inclusive training for all Front of House. You will form an important part of our client Leadership Team. You will support the activities of the management as directed and abide by all rules, regulations, policies and procedures of our client.


KEY RESPONSIBILITIES – SERVICE ​​​​​​​​KPI WEIGHTING


As Head Bartender your detailed responsibilities include:

 

Guest Experience​​​​​​​​​​ 25%

  • Show exceptional guest relationship skills and instil these in our client Bar Team

  • Make each guest’s experience special, sharing our client stories when applicable

  • Identify VIPs and industry figures on arrival and host them to a high standard

  • Act as an ambassador within the venue and build a rapport with guests

  • Hosts guests at the bar, and works the floor when time permits

  • To assist in the floor and hosting duties when needed

  • Ensure other team members are introduced to guests 

  • Assist the Beverage Director in the development and maintenance of a high-touch, best-in-class service environment

  • To work in the Back of House area and to work bar preparation and setup shifts

  • Maintain exceptional venue presentation, cleanliness and upkeep

  • Performing ad-hoc duties assigned by the management or Beverage Director

 

Bar Operations​​​​​​​​​​ 25%

  • Ensures all bar offerings are available at all times and delivered at the agreed world-class standard

  • Maintains impeccable hygiene standards in all aspects of beverage operations

  • Manages a clean, presentable, efficient bar

  • Minimises wastage, shrinkage and non-paid drinks

  • Assist the Beverage Director in the development and maintenance of all Standard Operating Procedures for FOH bar (E.g., Sequence-of-Service, dispense SOP)

  • Assist the Beverage Director to communicate, implement and monitor venue SOPs, SOS and professional standards 

  • Assist the Beverage Director in the development and maintenance of all Standard Operating Procedures for BOH (E.g., daily opening/closing, daily mise-en-place, weekly cleaning schedule)

  • Assist the Beverage Director in the implementation and maintenance of an effective Bar Manual (or equivalent) including a communications diary.

  • Assist the Beverage Director in managing all beverage inventory, including all stock-taking, procurement and restocking.

  • Assist the Beverage Director in upholding best practice stock handling procedures in the bar and around the venue and BOH areas

  • Assist the Beverage Director in exercising tight control over all bar expenses, including complimentary items and discount policies

  • Assist the Beverage Director in upholding a stringent in-bar stock control culture. 

  • Assist the Beverage Director in ensuring that the POS system accurately reflects all beverage menus and stock availability

  • Set responsibilities, coordinate, and manage our client bar team dynamic

  • Work collaboratively with and mentor all bar team members

  • Reward and recognise team and individual successes

  • Support and encourage team members' involvement in industry events and cocktail competitions

  • Be an industry leader in product knowledge and bar and beverage thought leadership

  • Constantly be self-learning

  • Constantly push the bar team to self-learn

  • Constantly push the bar team to create and learn new beverages 

  • Develops and maintains a strong and sustainable team culture that is in keeping with our client brand and guest experience

  • Assist the Beverage Director in the development and maintenance of a robust internal education program and beverage learning culture for all our client teams

  

Beverage and Creative ​​​​​​​​10%

  • Set the standards and provide the drive to make our client a truly world-class beverage program

  • Work with and protect through creative work, the brand personality, and the story of our client

  • Assist the Beverage Director in the development of world-class cocktails, innovate and think deeply when telling our client story through cocktails

  • Assist the Beverage Director in the development of cocktail specials and other special offerings

  • Assist the Beverage Director in the development of special event cocktails and beverage packages

  • Assist the Beverage Director and General Manager in the management and the physical organisation, security and upkeep of our client Gin Collection  

  • Assist in the recruitment of members and execution of the beverage elements of all societal activities

  • Assist the Beverage Director in the development implementation and advancement of the no-alcohol beverage offering

  • Work with the Beverage Director and General Manager on all new product requests and general management of beverage selection, POS, stock control and ordering/receiving

  • To be aware of safety in the bar, to have a complete understanding of adhering to the company’s policy regarding fire, hygiene and safety

 

Outreach ​​​​​​​​​​5%

  • At all times act as an impeccable ambassador for our client’s bar and beverage program

  • Be the point person when it comes to representing our client within the local bar industry

  • Work with our client ownership, Beverage Director, GM and our client PR on marketing and PR opportunities.

 

Reporting ​​​​​​​​​​10%

  • Report to the Beverage Director and GM on topics covering but not restricted to daily shift communications, human resource topics, COGS and inventory matters

  • Contribute creatively and constructively to team meetings and management meetings.
